Italian Almond Cookies

Ingredients

The cookie dough

  • 2 cups almond flour
  • cup maple sugar
  • 2 large egg whites
  • a pinch salt
  • a few drops almond extract

The coating

  • 1 large egg white
  • ½ cup sliced almonds

Instructions

  1. Preheat the oven to 325°F (163°C) and line a cookie sheet with parchment paper.
  2. In a large bowl, combine almond flour and maple sugar.
  3. In a separate bowl, beat the egg whites with salt and almond extract until soft peaks form.
  4. Fold the beaten egg whites into the flour mixture until a smooth dough forms.
  5. For the coating, beat the egg white in a small bowl.
  6. Shape the dough into 12 equal ovals, about 1½ inches long.
  7. Coat each cookie in beaten egg white and roll in sliced almonds.
  8. Arrange the cookies on the prepared sheet, spacing them apart.
  9. Bake for 25 to 30 minutes until golden, rotating the pan halfway through.
  10. Let the cookies cool on the pan before serving.
