Instructions
- Preheat the oven to 325°F (163°C) and line a cookie sheet with parchment paper.
- In a large bowl, combine almond flour and maple sugar.
- In a separate bowl, beat the egg whites with salt and almond extract until soft peaks form.
- Fold the beaten egg whites into the flour mixture until a smooth dough forms.
- For the coating, beat the egg white in a small bowl.
- Shape the dough into 12 equal ovals, about 1½ inches long.
- Coat each cookie in beaten egg white and roll in sliced almonds.
- Arrange the cookies on the prepared sheet, spacing them apart.
- Bake for 25 to 30 minutes until golden, rotating the pan halfway through.
- Let the cookies cool on the pan before serving.
