Chinese Almond Cookies

Ingredients

  • 130 g shortening
  • 70 g icing sugar
  • ¼ teaspoon salt
  • 80 g cornstarch
  • 120 g all-purpose flour
  • 60 g almond flakes
  • ¼ teaspoon almond extract

Instructions

  1. Preheat the oven to 160°C (325°F) and line a baking sheet with parchment paper.
  2. In a medium bowl, beat the shortening, icing sugar, salt, and almond extract until smooth.
  3. Add the cornstarch and all-purpose flour, then stir in the almond flakes to form a soft dough.
  4. Roll the dough between sheets of plastic to 1 cm (½ inch) thick, then cut out rounds with a cookie cutter.
  5. Arrange the cookies on the baking sheets and bake for 20 minutes.
  6. Remove from the oven and let cool completely before storing in an airtight container.
