Instructions
- Line an 8x8-inch baking pan with parchment paper.
- In a large bowl, mix together the peanut butter, coconut oil, maple syrup, vanilla, and sea salt until well combined.
- Add the almond flour and maca powder, stirring until the mixture is thick.
- Fold in the chocolate chips and press the mixture into the prepared pan.
- Place the pan in the freezer to firm up while preparing the cacao layer.
- In a small food processor, pulse the walnuts, cacao powder, and sea salt until the walnuts are finely chopped.
- Add the medjool dates and pulse to combine, adding water if necessary to achieve a smooth consistency.
- Spread the cacao layer over the cookie layer in the pan.
- Sprinkle with flaky sea salt if desired.
- Freeze for 30 minutes to help firm up before slicing into bars.
- Store the bars in the fridge or freeze for longer storage.
