Mediterranean Orzo Salad

Ingredients

The salad

  • 1 cup orzo, cooked
  • cups green kale, roughly chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, finely diced
  • ½ cup fresh parsley, chopped
  • ½ cup fresh cilantro, chopped
  • ¼ cup pickled jalapeno, finely diced
  • Juice of 1 lime
  • ½ cup Spread’em garlic + chives cheese

The dressing

  • 2 tbsp extra virgin olive oil
  • tsp salt
  • 1 tsp cracked pepper
  • 1 tsp dried oregano

Instructions

  1. 1. Boil water in a small pot and cook the orzo according to package instructions.
  2. 2. In a large bowl, combine all the salad ingredients.
  3. 3. Stir well until everything is combined.
  4. 4. Adjust seasoning and add extra olive oil or herbs to taste, then serve.
