Easy Maple Roasted Carrots

Ingredients

The carrots

  • 1 bunch carrots
  • 2 tablespoons maple syrup
  • 2 teaspoons olive oil
  • 1 tablespoon fresh thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ½ teaspoon lemon juice

The optional sauce

  • 1 cup water
  • ½ cup raw almonds
  • 4 ½ teaspoons fresh lemon juice
  • 1 ¾ teaspoons apple cider vinegar
  • ½ teaspoon sea salt
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Wash and peel the carrots if needed, then place them in a baking dish.
  3. Mix the other carrot ingredients in the dish or in a separate bowl and coat the carrots well.
  4. Bake the carrots for 35 minutes, adjusting time based on desired tenderness.
  5. While the carrots are baking, blend the sauce ingredients (except thyme) until smooth, then add thyme and pulse to combine.
  6. Allow the carrots to cool for about 10 minutes after baking, then drizzle with the sauce before serving.
