Instructions
- Preheat the oven to 400°F (205°C).
- Wash and peel the carrots if needed, then place them in a baking dish.
- Mix the other carrot ingredients in the dish or in a separate bowl and coat the carrots well.
- Bake the carrots for 35 minutes, adjusting time based on desired tenderness.
- While the carrots are baking, blend the sauce ingredients (except thyme) until smooth, then add thyme and pulse to combine.
- Allow the carrots to cool for about 10 minutes after baking, then drizzle with the sauce before serving.
