Chicken Marsala

Ingredients

The chicken

  • 1 pound boneless, skinless chicken breasts
  • ½ teaspoon freshly ground black pepper
  • ¼ + ⅛ teaspoon salt
  • ¼ teaspoon garlic powder
  • 2 tablespoons extra-virgin olive oil

The sauce and vegetables

  • 1 package (8-ounce) crimini or white mushrooms, quartered
  • ¼ medium red onion, diced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • ½ + 2 tablespoons organic or reduced sodium chicken broth
  • 2 teaspoons cornstarch
  • 2 teaspoons honey
  • 1 ½ teaspoons dried Italian herb seasoning
  • 1 tablespoon cold cubed butter
  • 4 teaspoons chopped chives (optional)

Instructions

  1. Pound the chicken breasts to an even thickness and season with pepper, salt, and garlic powder.
  2. Heat oil in a skillet and cook the chicken until browned, then transfer to a plate to keep warm.
  3. In the same pan, add more oil and cook the mushrooms, onion, and garlic until softened.
  4. Add Marsala wine and chicken broth, simmer until reduced.
  5. Whisk together broth, cornstarch, honey, Italian seasoning, and remaining seasonings, then stir into the pan to thicken.
  6. Return the chicken to the pan to reheat and coat with the sauce, then swirl in butter.
  7. Serve the chicken with sauce, garnished with chives if desired.
