Chicken Marsala

Ingredients

The chicken

  • 2 10-oz Boneless skinless chicken breasts
  • 1 tsp Sea salt
  • ¼ tsp Black pepper

The cooking fats

  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter

The aromatics

  • 2 cloves Crushed garlic

The sauce

  • 10 oz Cremini mushrooms
  • ¾ cup Marsala cooking wine
  • ½ cup Chicken broth, reduced sodium
  • 1 tbsp Arrowroot powder
  • ¼ cup Heavy cream
  • 1 tbsp Fresh parsley

Instructions

  1. Cut the chicken breasts in half lengthwise and pat dry.
  2. Season both sides of the chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden and cooked through.
  4. Transfer the chicken to a plate and keep warm.
  5. In the same pan, melt butter and sauté the mushrooms until golden brown.
  6. Add minced garlic and sauté until fragrant.
  7. Deglaze the pan with Marsala wine, scraping the bottom, and simmer until reduced by half.
  8. Whisk arrowroot powder with chicken broth and add to the pan along with heavy cream, simmering until the sauce thickens.
  9. Add the chicken back to the pan to heat through and adjust seasoning if necessary.
  10. Garnish with fresh parsley before serving.
