Instructions
- Cut the chicken breasts in half lengthwise and pat dry.
- Season both sides of the chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the chicken until golden and cooked through.
- Transfer the chicken to a plate and keep warm.
- In the same pan, melt butter and sauté the mushrooms until golden brown.
- Add minced garlic and sauté until fragrant.
- Deglaze the pan with Marsala wine, scraping the bottom, and simmer until reduced by half.
- Whisk arrowroot powder with chicken broth and add to the pan along with heavy cream, simmering until the sauce thickens.
- Add the chicken back to the pan to heat through and adjust seasoning if necessary.
- Garnish with fresh parsley before serving.
