Ingredients

The meat

  • 2 pounds pork shoulder, trimmed and cut into ½-inch pieces

The coating

  • ½ cup all-purpose flour
  • to taste salt
  • to taste freshly ground black pepper

The vegetables

  • 2 tablespoons avocado oil
  • 2 stalks celery, chopped (about 1 cup)
  • 1 medium onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped (about 1 cup)

The broth and seasoning

  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 teaspoon fresh thyme, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped

Instructions

  1. Combine pork, flour, salt, and pepper in a large bowl and toss to coat.
  2. Heat oil in a large pot over medium-high heat, then add the pork and sear until browned.
  3. Remove the pork from the pot and set aside.
  4. Reduce heat to medium and add celery, onion, garlic, and carrots, cooking until tender.
  5. Stir in tomato paste, then add beef broth, thyme, and rosemary.
  6. Return the seared pork to the pot, stir well, and bring to a boil.
  7. Reduce heat to low and simmer uncovered for about 45 minutes until thickened.
