The vegetables

The broth and seasoning

Instructions
- Combine pork, flour, salt, and pepper in a large bowl and toss to coat.
- Heat oil in a large pot over medium-high heat, then add the pork and sear until browned.
- Remove the pork from the pot and set aside.
- Reduce heat to medium and add celery, onion, garlic, and carrots, cooking until tender.
- Stir in tomato paste, then add beef broth, thyme, and rosemary.
- Return the seared pork to the pot, stir well, and bring to a boil.
- Reduce heat to low and simmer uncovered for about 45 minutes until thickened.
