Gingerbread Cookie Butter Oatmeal Cookies

Ingredients

  • 1 cup salted butter, softened to room temperature
  • 1⅔ cups cookie butter
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • ½ teaspoon ground ginger
  • ¼ cup molasses
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 cups quick oats

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a mixer, cream together the butter, cookie butter, granulated sugar, brown sugar, baking soda, baking powder, salt, and ginger until fluffy.
  3. Add the molasses, vanilla, and eggs, mixing until well combined.
  4. Add the flour and quick oats, mixing until just combined.
  5. Scoop the dough into balls and place them a couple of inches apart on the baking sheets.
  6. Bake for 10-12 minutes until set around the edges but still soft in the middle.
  7. Let the cookies rest for a few minutes on the baking sheets before transferring them to a cooling rack.
