Kickin' Cashew Chicken

Ingredients

The sauce

  • 2 medium onions
  • 2 tablespoons tomato paste
  • ½ cup cashews
  • 1 tablespoon garam masala
  • 1 teaspoon minced garlic
  • 1 teaspoon chili powder
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 tablespoon plain yogurt
  • 2 tablespoons oil

The chicken

  • 1 lb. cubed raw chicken breasts
  • ¼ cup golden raisins
  • ½ cup fresh chopped cilantro
  • cup water

Instructions

  1. Peel and quarter the onions, then puree in a food processor.
  2. Add tomato paste, cashews, garam masala, garlic, chili powder, lemon juice, salt, yogurt, and oil to the onion puree and process again.
  3. Heat oil in a heavy pan over medium heat, then fry the spice mixture for 2 minutes.
  4. Add cubed chicken, half of the cilantro, and golden raisins; stir-fry for 1 minute.
  5. Add water, bring to a simmer, cover, and cook on low for about 10 minutes until chicken is cooked through.
  6. Serve over rice, garnished with remaining cilantro or cashew pieces.
