Instructions
- Peel and quarter the onions, then puree in a food processor.
- Add tomato paste, cashews, garam masala, garlic, chili powder, lemon juice, salt, yogurt, and oil to the onion puree and process again.
- Heat oil in a heavy pan over medium heat, then fry the spice mixture for 2 minutes.
- Add cubed chicken, half of the cilantro, and golden raisins; stir-fry for 1 minute.
- Add water, bring to a simmer, cover, and cook on low for about 10 minutes until chicken is cooked through.
- Serve over rice, garnished with remaining cilantro or cashew pieces.
