Italian Farro Bake

Instructions
- 1. Preheat the oven to 400°F and prepare an 8x8 baking dish with olive oil spray.
- 2. In a large saucepot, heat olive oil over medium-high heat and sauté onion, garlic, and salt until onions are translucent.
- 3. Add farro and stir for 1 minute to combine.
- 4. Mix in tomato sauce, vegetable broth, and basil, then bring to a simmer and remove from heat.
- 5. Stir in lemon zest and 1 cup of Parmesan cheese.
- 6. Transfer the mixture to the prepared baking dish, cover with aluminum foil, and bake for 45 minutes, removing the foil for the last 5 minutes.
- 7. After baking, sprinkle the remaining Parmesan and oregano on top before serving.
