Italian Farro Bake

Ingredients

  • 1 tablespoon Extra Virgin Olive Oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • 1 ½ cups pearled farro
  • 1 cup tomato sauce
  • 2 ½ cups vegetable broth
  • 1 teaspoon dried basil
  • Zest from 1 lemon
  • 2 ½ oz Parmesan cheese, freshly grated, divided
  • 2 teaspoons dried oregano

Instructions

  1. 1. Preheat the oven to 400°F and prepare an 8x8 baking dish with olive oil spray.
  2. 2. In a large saucepot, heat olive oil over medium-high heat and sauté onion, garlic, and salt until onions are translucent.
  3. 3. Add farro and stir for 1 minute to combine.
  4. 4. Mix in tomato sauce, vegetable broth, and basil, then bring to a simmer and remove from heat.
  5. 5. Stir in lemon zest and 1 cup of Parmesan cheese.
  6. 6. Transfer the mixture to the prepared baking dish, cover with aluminum foil, and bake for 45 minutes, removing the foil for the last 5 minutes.
  7. 7. After baking, sprinkle the remaining Parmesan and oregano on top before serving.
