Ingredients

The Farro

  • 1 cup uncooked farro, rinsed

Lemon Herb Dressing

  • 1 tablespoon extra-virgin olive oil
  • ½ tablespoon fresh lemon juice, plus more to taste
  • ½ tablespoon fresh thyme leaves
  • 1 clove garlic, grated
  • ¼ teaspoon Dijon mustard
  • ½ teaspoon sea salt, plus more to taste
  • 1 pinch freshly ground black pepper
  • ½ cup chopped fresh parsley
  • optional red pepper flakes

Instructions

  1. Rinse the uncooked farro in cold water using a fine mesh sieve.
  2. Bring a medium pot of salted water to a boil and add the rinsed farro.
  3. Reduce the heat and simmer until the farro is tender and chewy, checking for doneness based on the type of farro used.
  4. Drain the farro and spread it onto a baking sheet or large plate to cool and dry for about 20 minutes.
  5. In a large mixing bowl, whisk together the olive oil, lemon juice, thyme, garlic, mustard, salt, and pepper to make the dressing.
  6. Add the cooled farro to the dressing and toss to combine.
  7. Stir in the chopped parsley and season to taste before serving.
