Instructions
- Rinse the uncooked farro in cold water using a fine mesh sieve.
- Bring a medium pot of salted water to a boil and add the rinsed farro.
- Reduce the heat and simmer until the farro is tender and chewy, checking for doneness based on the type of farro used.
- Drain the farro and spread it onto a baking sheet or large plate to cool and dry for about 20 minutes.
- In a large mixing bowl, whisk together the olive oil, lemon juice, thyme, garlic, mustard, salt, and pepper to make the dressing.
- Add the cooled farro to the dressing and toss to combine.
- Stir in the chopped parsley and season to taste before serving.
