Cilantro Lime Farro

Ingredients

The farro base

  • 1 cup farro, rinsed
  • 3 cups vegetable or chicken stock

The seasoning

  • cup finely-chopped fresh cilantro leaves, loosely-packed
  • 1 small lime (zest and juice, about 2 tablespoons juice)
  • ½ teaspoon salt
  • a pinch cumin
  • a pinch garlic powder
  • a pinch black pepper

Instructions

  1. 1. Rinse the farro and place it in a medium saucepan with the stock.
  2. 2. Bring the mixture to a boil over medium-high heat.
  3. 3. Reduce the heat to medium-low and simmer for about 30 minutes until the farro is cooked and chewy.
  4. 4. Drain any excess liquid from the farro.
  5. 5. Add the lime zest, lime juice, cilantro, and seasonings to the farro.
  6. 6. Stir to combine and serve warm.
