Ingredients

The farro

  • 1 cup dry farro

The cooking water

  • 4 cups water
  • ΒΌ teaspoon fine salt

Optional flavorings

  • 1 small clove garlic (pressed or minced)
  • to taste none extra virgin olive oil

Instructions

  1. Rinse the farro under cool running water to remove dust and excess starch.
  2. In a medium saucepan, combine the rinsed farro with at least 4 cups of water and add the salt.
  3. Bring the water to a boil over medium-high heat, then reduce to a gentle simmer.
  4. Cook the farro until it's tender but still chewy; pearled farro takes about 15 minutes, while unprocessed farro takes 25 to 40 minutes.
  5. Drain the farro well.
  6. If desired, stir in olive oil and garlic while the farro is hot, and season with additional salt to taste.
