Fried Quinoa Cakes
Ingredients
The quinoa mixture

cooked quinoa

heavy coconut milk

sea salt

teaspoon
liquid vanilla stevia

For frying

tablespoons
coconut oil
Instructions
- Soak quinoa overnight in water, then rinse and strain.
- Cook quinoa with 1½ cups of water as you would rice.
- In a mixing bowl, combine cooked quinoa, coconut milk, salt, stevia, and egg.
- Transfer the mixture to a greased 13 x 9 inch baking dish and bake at 350°F for about 30 minutes until set.
- Cool the casserole and refrigerate overnight.
- Cut the casserole into 6 equal pieces.
- Heat coconut oil in a skillet over medium heat.
- Fry the slices until browned on both sides, adding more oil as needed.
- Serve with extra coconut oil or ghee and jam on top.
