Fried Quinoa Cakes

Ingredients

The quinoa mixture

  • cups cooked quinoa
  • cups heavy coconut milk
  • ¼ teaspoon sea salt
  • teaspoon liquid vanilla stevia
  • 1 large egg

For frying

  • 2 tablespoons coconut oil

Instructions

  1. Soak quinoa overnight in water, then rinse and strain.
  2. Cook quinoa with 1½ cups of water as you would rice.
  3. In a mixing bowl, combine cooked quinoa, coconut milk, salt, stevia, and egg.
  4. Transfer the mixture to a greased 13 x 9 inch baking dish and bake at 350°F for about 30 minutes until set.
  5. Cool the casserole and refrigerate overnight.
  6. Cut the casserole into 6 equal pieces.
  7. Heat coconut oil in a skillet over medium heat.
  8. Fry the slices until browned on both sides, adding more oil as needed.
  9. Serve with extra coconut oil or ghee and jam on top.
