For caramelizing
Instructions
- Preheat the oven to 325°F and prepare a water bath.
- Heat the cream, vanilla, and sugar in a saucepan until the sugar dissolves.
- Whisk the egg yolks and salt in a bowl, then combine with the cream mixture and strain into a baking dish.
- Place the baking dish in the water bath and bake until the edges are set but the center wobbles slightly.
- Remove from the water bath and chill for at least 4 hours.
- Sprinkle sugar on top and use a torch to caramelize until amber.
