Colossal Crème Brûlée

Ingredients

The custard

  • 3 cups heavy cream
  • 1 Tbsp. vanilla bean paste or vanilla extract
  • ¾ cup granulated sugar
  • 8 large egg yolks
  • tsp. Diamond Crystal kosher salt or ¾ tsp. Morton kosher salt

For caramelizing

  • 3 Tbsp. granulated sugar

Instructions

  1. Preheat the oven to 325°F and prepare a water bath.
  2. Heat the cream, vanilla, and sugar in a saucepan until the sugar dissolves.
  3. Whisk the egg yolks and salt in a bowl, then combine with the cream mixture and strain into a baking dish.
  4. Place the baking dish in the water bath and bake until the edges are set but the center wobbles slightly.
  5. Remove from the water bath and chill for at least 4 hours.
  6. Sprinkle sugar on top and use a torch to caramelize until amber.
