Cauliflower and Chickpea Salad

Instructions
- 1. Cook the cauliflower in boiling water for 8 minutes, then drain and transfer to ice water to stop cooking.
- 2. Drain the cauliflower again and place it in a large bowl with the diced red pepper, chickpeas, green olives, and parsley.
- 3. In a separate bowl, mix together the olive oil, maple syrup, mustard, salt, and black pepper.
- 4. Pour the dressing over the salad ingredients, stir well, and serve.
