Cauliflower and Chickpea Salad

Ingredients

The salad

  • 1 head cauliflower
  • 1 medium red bell pepper
  • 1 cup chickpeas
  • cup green olives
  • ¼ cup parsley

The dressing

  • 2 tbsp olive oil
  • 1 tsp maple syrup
  • 1 tbsp whole grain mustard
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. 1. Cook the cauliflower in boiling water for 8 minutes, then drain and transfer to ice water to stop cooking.
  2. 2. Drain the cauliflower again and place it in a large bowl with the diced red pepper, chickpeas, green olives, and parsley.
  3. 3. In a separate bowl, mix together the olive oil, maple syrup, mustard, salt, and black pepper.
  4. 4. Pour the dressing over the salad ingredients, stir well, and serve.
