Chicken Broccoli Olive and Goat Cheese Pizza

Ingredients

Dough

  • ¼ recipe Whole wheat pizza crust
  • ¼ cup cornmeal

Toppings

  • 1 small chicken breast, cut into 1" cubes
  • 1 tsp extra virgin olive oil
  • 1 tbsp cornstarch
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2-3 tbsp tomato pizza sauce
  • 1 cup slightly cooked broccoli florets
  • 6-8 pieces kalamata olives, sliced
  • 75 g low fat Mozzarella cheese, grated

Add-ons

  • 25 g unripened soft goat cheese, crumbled

Instructions

  1. Preheat the oven to 500F.
  2. In a medium bowl, mix cornstarch, salt, and pepper.
  3. Toss chicken in the mixture until coated.
  4. Heat olive oil in a skillet and cook the chicken until golden, about 6-7 minutes.
  5. Steam or microwave broccoli florets for about 30 seconds to soften.
  6. Roll or stretch the dough into a 10-12 inch disc using cornmeal to prevent sticking.
  7. Place the dough on a pizza pan dusted with cornmeal.
  8. Spread tomato sauce on the dough and sprinkle mozzarella cheese on top.
  9. Add chicken, broccoli, and olives, then bake for 10-12 minutes until cheese is melted.
  10. Remove from oven and sprinkle with goat cheese.
