Instructions
- Skim the coconut cream from the coconut milk and mix it with salt, pepper, and lemongrass oil in a bowl.
- Preheat the grill to 350°F for direct heat.
- Marinate the chicken in the remaining coconut milk with the curry rub or spices for a few minutes, then grill until cooked through.
- Use a vegetable peeler to create zucchini noodles, then toss them with the coconut cream mixture.
- Chop the basil and grilled chicken, then combine everything together and serve.
