Thai Basil Curried Chicken Noodle Salad

Ingredients

  • 4 large zucchini
  • 1 lb boneless chicken tenders
  • 1 tbsp Dizzy Pig Curry Rub or curry powder + sea salt
  • 1 can coconut milk
  • 1 bunch basil
  • 1 drop lemongrass essential oil
  • ½ tsp sea salt
  • ½ tsp fresh ground pepper

Instructions

  1. Skim the coconut cream from the coconut milk and mix it with salt, pepper, and lemongrass oil in a bowl.
  2. Preheat the grill to 350°F for direct heat.
  3. Marinate the chicken in the remaining coconut milk with the curry rub or spices for a few minutes, then grill until cooked through.
  4. Use a vegetable peeler to create zucchini noodles, then toss them with the coconut cream mixture.
  5. Chop the basil and grilled chicken, then combine everything together and serve.
