Instructions
- Heat olive oil in a pot over medium heat, then add onion and red bell pepper, sautéing for 5 minutes.
- Add quinoa, garlic, and chili powder, sautéing for an additional 3 minutes.
- Stir in vegetable broth, black beans, carrots, corn, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to medium-low and cover, simmering for 20 minutes.
- Stir in cilantro and lime juice before serving, and garnish as desired.
