Ingredients

The base

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 6 cloves garlic, minced
  • ¾ cup quinoa, rinsed
  • 1 ½ teaspoons chili powder
  • 4 cups vegetable broth
  • 1 ½ cups cooked black beans
  • 1 cup grated carrots
  • 1 cup corn
  • 1 leaf bay leaf
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground pepper

The finish

  • ¼ cup chopped cilantro
  • 2 tablespoons lime juice

For garnish

  • chopped tomatoes
  • red pepper
  • carrots

Instructions

  1. Heat olive oil in a pot over medium heat, then add onion and red bell pepper, sautéing for 5 minutes.
  2. Add quinoa, garlic, and chili powder, sautéing for an additional 3 minutes.
  3. Stir in vegetable broth, black beans, carrots, corn, bay leaf, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to medium-low and cover, simmering for 20 minutes.
  5. Stir in cilantro and lime juice before serving, and garnish as desired.
