Mediterranean Egg Bites

Ingredients

The egg mixture

  • 5 large eggs
  • ½ cup milk
  • ¾ cup feta cheese
  • 12 pieces kalamata olives, chopped
  • ½ cup tomatoes, diced
  • ¾ tsp fine sea salt
  • to taste black pepper

The vegetables

  • ½ large onion, diced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped

The cooking oil

  • 1 tsp extra virgin olive oil

Instructions

  1. Preheat the oven to 350°F and spray a muffin tin with cooking spray.
  2. Sauté the diced onion in olive oil over medium heat for 5-7 minutes until softened.
  3. Add minced garlic and spinach to the skillet and sauté until the spinach is wilted, then remove from heat.
  4. In a large bowl, whisk together the eggs and milk, then mix in feta, olives, tomatoes, salt, and pepper.
  5. Stir in the onion and spinach mixture.
  6. Pour the mixture into the muffin tin using a ¼ cup measure.
  7. Bake for 25 minutes, then allow to cool slightly before serving.
