Mediterranean Egg Bites

Instructions
- Preheat the oven to 350°F and spray a muffin tin with cooking spray.
- Sauté the diced onion in olive oil over medium heat for 5-7 minutes until softened.
- Add minced garlic and spinach to the skillet and sauté until the spinach is wilted, then remove from heat.
- In a large bowl, whisk together the eggs and milk, then mix in feta, olives, tomatoes, salt, and pepper.
- Stir in the onion and spinach mixture.
- Pour the mixture into the muffin tin using a ¼ cup measure.
- Bake for 25 minutes, then allow to cool slightly before serving.
