Ingredients

The egg mixture

  • 6 large eggs
  • ¾ cup whole milk cottage cheese
  • ¼ teaspoon sea salt
  • black pepper to taste freshly ground black pepper

The vegetables

  • 3 cups fresh spinach
  • ½ cup diced roasted red bell pepper
  • ½ cup chopped green onion

For greasing

  • as needed extra-virgin olive oil

Instructions

  1. Preheat the oven to 350°F and grease a nonstick muffin tin with olive oil.
  2. Blend the eggs, cottage cheese, salt, and pepper until smooth.
  3. Steam the spinach for 1 minute until wilted, then squeeze out excess water and chop.
  4. Combine the spinach, roasted red peppers, and green onions in a bowl.
  5. Divide the vegetable mixture among the muffin cups and pour the egg mixture over the top.
  6. Bake for 18 to 22 minutes until the eggs are set.
  7. Let cool for 5 minutes before removing from the pan.
