Egg Bites

The egg mixture

The vegetables

fresh spinach

diced roasted red bell pepper

Instructions
- Preheat the oven to 350°F and grease a nonstick muffin tin with olive oil.
- Blend the eggs, cottage cheese, salt, and pepper until smooth.
- Steam the spinach for 1 minute until wilted, then squeeze out excess water and chop.
- Combine the spinach, roasted red peppers, and green onions in a bowl.
- Divide the vegetable mixture among the muffin cups and pour the egg mixture over the top.
- Bake for 18 to 22 minutes until the eggs are set.
- Let cool for 5 minutes before removing from the pan.
