Quick & Easy Egg Bites

Instructions
- Preheat the oven to 300°F and place a pan of water on the lower rack.
- Grease a standard muffin tin with olive oil or use muffin liners.
- Blend eggs, cottage cheese, shredded cheese, salt, and pepper until smooth.
- Pour the mixture into the muffin tins, filling them about ¾ full.
- Add roasted pepper and basil on top, and optionally add cherry tomatoes and parmesan.
- Bake in the middle rack for 20-30 minutes until set and golden.
- Let cool for 5-10 minutes, then loosen edges and scoop out.
