Quick & Easy Egg Bites

Ingredients

The base

  • 6 large eggs
  • 1 ¼ cup whole milk cottage cheese
  • 1 ¼ cup shredded cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

The mix-ins

  • 1 whole roasted bell pepper
  • ¼–½ cup fresh basil leaves
  • 6–12 whole cherry tomatoes
  • 3 tablespoons parmesan cheese (optional)

Instructions

  1. Preheat the oven to 300°F and place a pan of water on the lower rack.
  2. Grease a standard muffin tin with olive oil or use muffin liners.
  3. Blend eggs, cottage cheese, shredded cheese, salt, and pepper until smooth.
  4. Pour the mixture into the muffin tins, filling them about ¾ full.
  5. Add roasted pepper and basil on top, and optionally add cherry tomatoes and parmesan.
  6. Bake in the middle rack for 20-30 minutes until set and golden.
  7. Let cool for 5-10 minutes, then loosen edges and scoop out.
