Red Pepper Egg Bites

Ingredients

The egg mixture

  • 2 cups egg whites
  • 1 cup cottage cheese
  • ½ cup Monterey Jack cheese, shredded
  • ½ cup feta cheese, shredded
  • 1 tsp hot sauce
  • ½ tsp salt
  • ¼ tsp pepper

The vegetables

  • ½ cup red bell pepper, finely chopped
  • ½ cup spinach, finely chopped
  • 3 tbsp green onion, sliced

Other

  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
  2. Sauté the red bell pepper, spinach, and green onion in olive oil for 3-4 minutes, then cool in the fridge.
  3. Combine egg whites, cottage cheese, Monterey Jack cheese, feta cheese, hot sauce, salt, and pepper in a mixing bowl or blender.
  4. Blend until fully combined, then mix in the cooled vegetables.
  5. Pour the mixture into the muffin pan, filling each cup ½ to ⅔ full.
  6. Bake for 20-22 minutes until fully cooked and no longer jiggly.
