Instructions
- Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
- Sauté the red bell pepper, spinach, and green onion in olive oil for 3-4 minutes, then cool in the fridge.
- Combine egg whites, cottage cheese, Monterey Jack cheese, feta cheese, hot sauce, salt, and pepper in a mixing bowl or blender.
- Blend until fully combined, then mix in the cooled vegetables.
- Pour the mixture into the muffin pan, filling each cup ½ to ⅔ full.
- Bake for 20-22 minutes until fully cooked and no longer jiggly.
