Ingredients

The base

  • 9 large eggs
  • ½ cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper

The vegetables

  • ½ medium red bell pepper, diced
  • ¼ cup sliced green onion

The cheese

  • ½ cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 350°F and lightly grease a 12-cup muffin tin.
  2. Add the eggs, cottage cheese, salt, garlic powder, and black pepper to a blender and pulse until well mixed.
  3. Distribute the diced bell pepper and green onion evenly across the muffin tins.
  4. Sprinkle shredded cheddar cheese into each muffin tin.
  5. Pour the egg mixture into the muffin tins until they are about ¾ full.
  6. Bake for 20-22 minutes until the tops are set and edges are golden.
  7. Let the egg bites rest in the muffin tins for 5 minutes before removing.
