Instructions
- Preheat the oven to 350°F and lightly grease a 12-cup muffin tin.
- Add the eggs, cottage cheese, salt, garlic powder, and black pepper to a blender and pulse until well mixed.
- Distribute the diced bell pepper and green onion evenly across the muffin tins.
- Sprinkle shredded cheddar cheese into each muffin tin.
- Pour the egg mixture into the muffin tins until they are about ¾ full.
- Bake for 20-22 minutes until the tops are set and edges are golden.
- Let the egg bites rest in the muffin tins for 5 minutes before removing.
