Easy Egg Bites with Cottage Cheese

Ingredients

The egg mixture

  • 8 eggs eggs
  • 1 cup cottage cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ teaspoon fine salt
  • pinch black pepper

For garnish

  • to taste fresh chives, roughly chopped

For baking

  • as needed cooking spray

Instructions

  1. Preheat the oven to 350°F and lightly mist the cups of a silicone muffin pan with cooking spray.
  2. Blend the eggs, cottage cheese, cheddar, salt, and pepper until smooth.
  3. Divide the mixture into the muffin cups, filling each about half full, and sprinkle with chopped chives and any desired mix-ins.
  4. Bake for 20-22 minutes until the egg bites are slightly firm to touch in the center.
  5. Let the egg bites cool for a few minutes before removing them from the pan.
