Instructions
- Preheat the oven to 350°F and lightly mist the cups of a silicone muffin pan with cooking spray.
- Blend the eggs, cottage cheese, cheddar, salt, and pepper until smooth.
- Divide the mixture into the muffin cups, filling each about half full, and sprinkle with chopped chives and any desired mix-ins.
- Bake for 20-22 minutes until the egg bites are slightly firm to touch in the center.
- Let the egg bites cool for a few minutes before removing them from the pan.
