Ingredients

The crust

  • 1 cup all-purpose flour
  • ½ cup old-fashioned oats
  • ¾ cup packed dark brown sugar
  • ½ cup unsalted butter, softened

The filling

  • ¾ cup granulated sugar
  • 15 oz pumpkin puree
  • 12 oz evaporated milk
  • 2 large eggs
  • teaspoons pumpkin pie spice
  • ½ cup pecans, chopped

Instructions

  1. 1. Preheat the oven to 350°F (176°C).
  2. 2. In a stand mixer, combine the flour, oats, ½ cup brown sugar, and butter, and beat until crumbly.
  3. 3. Press the oat mixture into the bottom of an ungreased 13x9-inch baking pan and bake for 15 minutes.
  4. 4. In a large bowl, whisk together the granulated sugar, pumpkin, evaporated milk, eggs, and pumpkin pie spice until combined.
  5. 5. Pour the pumpkin mixture over the crust and bake for 20 minutes.
  6. 6. Combine the pecans and the remaining brown sugar in a small bowl and sprinkle over the filling.
  7. 7. Continue baking for an additional 20 minutes or until a toothpick inserted in the center comes out clean.
  8. 8. Cool completely in the pan on a wire rack, then cut into bars.
