Vegan Apple Cake

Ingredients

The cake

  • ½ cup aquafaba (liquid from canned beans)
  • ½ cup brown sugar (or coconut palm sugar)
  • ¼ cup plant-based milk, plain, unsweetened
  • 1 teaspoon vanilla
  • ½ cup vegan margarine spread, melted
  • 1 ¼ cups all purpose flour
  • 1 teaspoon baking powder

Apple filling

  • 2 medium apples, peeled, thinly sliced
  • ½ teaspoon cinnamon
  • 1 teaspoon brown sugar

Garnish (optional)

  • 1 tablespoon pearl sugar

Instructions

  1. Whip aquafaba and brown sugar until stiff peaks form.
  2. Gently fold in plant-based milk, vanilla, and melted vegan margarine.
  3. Mix flour and baking powder together, then fold into the batter until smooth.
  4. Preheat the oven to 350°F.
  5. Spray a 9-inch round cake pan with nonstick cooking spray.
  6. Spread the batter in the cake pan.
  7. Toss apples with cinnamon and brown sugar to coat.
  8. Arrange the apples over the cake batter.
  9. Sprinkle with pearl sugar if desired.
  10. Bake for about 30-35 minutes until the cake is tender and golden.
