Instructions
- Preheat the oven to high broil.
- Brown the ground turkey in a cast iron skillet and drain the fat.
- Sauté garlic, sweet potato, and red onion in olive oil until the sweet potatoes are almost cooked through.
- Add black beans, white beans, sweet corn, enchilada sauce, and the cooked meat, then bring to a slight boil.
- Remove from heat, sprinkle cheese on top, and broil in the oven for 1 minute to melt the cheese.
- Top with sliced avocado and fresh cilantro, and serve with tortilla chips.
