Ingredients

The main ingredients

  • ½ pound ground turkey
  • 1.5 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 medium sweet potato, peeled and diced
  • ½ medium red onion, minced
  • ½ cup black beans, drained and rinsed
  • ½ cup white northern beans, drained and rinsed
  • ½ cup sweet corn, canned or frozen
  • 1.5 cups enchilada sauce
  • ½ cup shredded cheddar cheese
  • 2 tablespoons minced fresh cilantro
  • 1 large avocado, sliced

Seasoning

  • to taste salt

Instructions

  1. Preheat the oven to high broil.
  2. Brown the ground turkey in a cast iron skillet and drain the fat.
  3. Sauté garlic, sweet potato, and red onion in olive oil until the sweet potatoes are almost cooked through.
  4. Add black beans, white beans, sweet corn, enchilada sauce, and the cooked meat, then bring to a slight boil.
  5. Remove from heat, sprinkle cheese on top, and broil in the oven for 1 minute to melt the cheese.
  6. Top with sliced avocado and fresh cilantro, and serve with tortilla chips.
