Healthy Turkey Enchiladas

Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 cups broccoli, chopped small
  • 1 lb ground turkey (93/7 preferred)
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 1 can black beans, drained and rinsed
  • 1 4oz can green chiles, drained
  • 1 lime juiced
  • 15 oz red enchilada sauce
  • 2 cups shredded cheddar cheese
  • 8–10 pieces soft flour tortillas

Instructions

  1. Preheat the oven to 400ºF.
  2. Heat olive oil in a large pan and sauté onion and broccoli for about 5 minutes.
  3. Add ground turkey and minced garlic, cooking until the turkey is no longer pink.
  4. Stir in chili powder, oregano, salt, and pepper, then add black beans and green chiles.
  5. Mix in lime juice and ¼ cup of enchilada sauce, simmering for 2-3 minutes.
  6. Spread ¼ cup of enchilada sauce on the bottom of a 9x13 casserole dish.
  7. Lay out tortillas, adding ½ cup of the mixture to each, sprinkle with cheese, and roll tightly.
  8. Place rolled tortillas seam-side down in the dish, filling any empty spaces.
  9. Top with remaining enchilada sauce and sprinkle with cheese.
  10. Bake for 20 minutes and let cool for 10 minutes before serving.
