Turkey Enchiladas

Ingredients

The filling

  • 2 cups shredded turkey or chicken
  • 1 14-ounce can black beans
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 1 teaspoon granulated garlic powder
  • ¼ teaspoon salt
  • 1–2 tablespoons chopped cilantro
  • 2 cups shredded jack cheese
  • 8 tortillas corn or flour

The sauce

  • 12 to 15 ounces enchilada sauce

Garnishes

  • to taste cilantro
  • to taste scallions
  • to taste jalapeño slices
  • to taste avocado
  • to taste sour cream

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the enchilada sauce if making from scratch.
  3. Mix shredded turkey, black beans, spices, salt, and any optional additions in a bowl. Stir in ½ cup of enchilada sauce.
  4. Pour ¾ cup of enchilada sauce into a greased baking dish.
  5. Fill the tortillas with the turkey mixture and roll them up, placing seam-side down in the dish.
  6. Cover the enchiladas with the remaining sauce and sprinkle with cheese.
  7. Bake uncovered for 20-25 minutes until heated through and golden.
  8. Garnish with cilantro, scallions, jalapeño, avocado, and sour cream before serving.
