Instructions
- Preheat the oven to 400°F.
- Prepare the enchilada sauce if making from scratch.
- Mix shredded turkey, black beans, spices, salt, and any optional additions in a bowl. Stir in ½ cup of enchilada sauce.
- Pour ¾ cup of enchilada sauce into a greased baking dish.
- Fill the tortillas with the turkey mixture and roll them up, placing seam-side down in the dish.
- Cover the enchiladas with the remaining sauce and sprinkle with cheese.
- Bake uncovered for 20-25 minutes until heated through and golden.
- Garnish with cilantro, scallions, jalapeño, avocado, and sour cream before serving.
