Turkey Enchiladas

Ingredients

The filling

  • 3 cups cooked, roughly-chopped turkey
  • 2 cups salsa verde
  • 1 14-ounce can Great Northern beans
  • 2 medium avocados, peeled, pitted and diced
  • ½ medium red onion, diced
  • 8 large Old El Paso flour tortillas
  • 3 cups shredded Mexican cheese
  • ½ cup chopped fresh cilantro leaves

For baking

  • cup salsa verde
  • 1 cup shredded cheese (reserved)
  • ½ cup red onion (reserved)
  • 1 medium avocado (reserved)

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish with cooking spray and salsa verde.
  2. Reserve some cheese, avocado, and red onion for later use.
  3. Prepare each tortilla by spreading salsa verde and layering with avocado, red onion, turkey, cheese, and beans.
  4. Fold and place each enchilada in the baking dish, then top with remaining salsa verde and cheese.
  5. Bake for 20 minutes, then garnish with reserved avocado, red onion, and cilantro before serving.
