Ingredients

Noodles and Beansprouts

  • 1 pack yellow noodles, blanched
  • to taste beansprouts, blanched

Spice Paste for Gravy

  • 8 pieces dried red chilies, soaked
  • ½ tablespoon ground coriander
  • ½ teaspoon fennel
  • ½ teaspoon ground cumin
  • 10 pieces shallots, chopped
  • ½ teaspoon ground turmeric
  • 1 inch ginger

Gravy Ingredients

  • 1 tablespoon cooking oil
  • 1 stick cinnamon
  • 350 grams sweet potatoes, skinned, steamed and mashed
  • 7 cups chicken stock
  • 1 cup prawn stock
  • 1 tablespoon tamarind concentrate
  • ½ cup coconut milk
  • to taste salt

Toppings

  • 2 pieces hard-boiled eggs, shelled and halved
  • to taste fried beancurd, sliced
  • to taste prawn fritters
  • to taste fried shallots
  • to taste limes
  • to taste shredded lettuce

Instructions

  1. Blend the spice paste ingredients in a food processor or blender and set aside.
  2. Heat oil in a pan over medium heat, add the cinnamon stick and spice paste, and cook until aromatic.
  3. Loosen the mashed sweet potatoes with 2 cups of chicken stock and add to the pan with the remaining chicken stock and prawn stock. Stir and simmer for 15 minutes.
  4. Stir in the tamarind concentrate and coconut milk, and continue simmering until the gravy thickens. Season with salt to taste.
  5. To serve, place the noodles and beansprouts in a bowl and garnish with hard-boiled eggs, prawn fritters, beancurd, fried shallots, shredded lettuce, and lime.
