Instant Pot Homemade BBQ Baked Beans

Ingredients

The beans

  • 16 oz dried navy beans or pinto beans
  • 8 cups chicken broth

The meat

  • 4 slices bacon, cut into 1 inch cubes

The vegetables

  • 1 cup chopped onion
  • 2 cloves garlic, minced

The sauce

  • 1 cup bbq sauce
  • ½ cup ketchup
  • 2-4 tablespoons brown sweetener or sugar
  • 1 tablespoon chili powder
  • 1 teaspoon liquid smoke
  • to taste salt and pepper

Instructions

  1. Add chicken broth and dried beans to the Instant Pot.
  2. Cook the beans on High-Pressure for 25 minutes and allow natural release for 25 minutes.
  3. Drain and rinse the beans.
  4. Set the Instant Pot to Saute and cook the bacon until browned, then remove it.
  5. Drain excess fat but leave a teaspoon in the pot.
  6. Saute onions and garlic until translucent.
  7. Add the beans back with BBQ sauce, ketchup, half the bacon, chili powder, brown sweetener, liquid smoke, salt, and pepper.
  8. Cook for 4-5 minutes, stirring frequently.
  9. Turn off Saute and let the beans sit with the lid on for 10 minutes to thicken.
  10. Serve topped with remaining bacon.
