Ingredients

The beans

  • 1 pound dried Navy beans
  • 8 cups water
  • ½ teaspoon fine salt
  • 1 each bay leaf

The flavorings

  • 6 slices uncooked bacon
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 cup ketchup
  • ¼ cup maple syrup
  • 3 tablespoons spicy brown or Dijon mustard
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons molasses
  • ½-1 teaspoon liquid smoke (optional)
  • to taste none fine salt and black pepper
  • to garnish none chopped fresh parsley

Instructions

  1. Add dried beans, water, salt, and bay leaf to the Instant Pot and cook for 25 minutes at high pressure.
  2. Allow for 15 minutes of natural pressure release, then release remaining pressure.
  3. Drain and rinse the beans, then set aside.
  4. Select 'Saute' on the Instant Pot, spray with cooking spray, and cook chopped bacon until crispy.
  5. Remove bacon and leave 1 tablespoon of grease in the pot.
  6. Cook diced onion in the bacon grease until softened, then add minced garlic and cook until fragrant.
  7. Add 1 cup of water and scrape up any browned bits, then stir in ketchup, maple syrup, mustard, vinegar, molasses, and liquid smoke.
  8. Add cooked beans and bacon back to the pot and stir.
  9. Lock the lid and cook for 10 minutes at high pressure.
  10. If a 'Burn' message appears, release pressure, add ½ cup water, and cook for another 10 minutes.
  11. Allow for 10 minutes of natural pressure release before venting the remaining steam.
  12. Stir and garnish with parsley if desired.
