Instant Pot Baked Beans

Instructions
- Add dried beans, water, salt, and bay leaf to the Instant Pot and cook for 25 minutes at high pressure.
- Allow for 15 minutes of natural pressure release, then release remaining pressure.
- Drain and rinse the beans, then set aside.
- Select 'Saute' on the Instant Pot, spray with cooking spray, and cook chopped bacon until crispy.
- Remove bacon and leave 1 tablespoon of grease in the pot.
- Cook diced onion in the bacon grease until softened, then add minced garlic and cook until fragrant.
- Add 1 cup of water and scrape up any browned bits, then stir in ketchup, maple syrup, mustard, vinegar, molasses, and liquid smoke.
- Add cooked beans and bacon back to the pot and stir.
- Lock the lid and cook for 10 minutes at high pressure.
- If a 'Burn' message appears, release pressure, add ½ cup water, and cook for another 10 minutes.
- Allow for 10 minutes of natural pressure release before venting the remaining steam.
- Stir and garnish with parsley if desired.
