Instructions
- Soak beans in 7 cups of water overnight, then drain and rinse.
- Turn the Instant Pot to the Sauté function and cook the bacon until mostly done.
- Add onions to the bacon and cook until translucent.
- Add garlic and cook for 1 minute until fragrant.
- Add salt, pepper, water, maple syrup, ketchup, molasses, BBQ sauce, mustard, vinegar, and liquid smoke, stirring well.
- Add beans and brown sugar, stir, and lock the lid in place with the steam release knob set to Sealing.
- Cancel the Sauté function and set to Pressure Cook for 40 minutes.
- Let the pot naturally release pressure for 15 minutes, then manually release the remaining pressure.
- Check the beans for tenderness and cook longer if necessary.
- If the beans are too soupy, use the Sauté function to cook them down until thickened.
- Keep warm until serving.
