The glaze
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the dry ingredients including flour, sugar, baking soda, spices, and salt.
- Make two wells in the dry mixture; add cider vinegar to one and melted shortening/oil to the other.
- Pour water over the mixture and stir until just combined, avoiding over-mixing.
- Transfer the batter to a greased loaf pan or an 8x8 baking dish.
- Bake for 30-40 minutes until a toothpick comes out clean.
- Let the cake cool on a wire rack.
- For the glaze, combine powdered sugar with lemon juice until smooth.
- Once the cake is cool, pour the glaze over it.
