Ingredients

The cake

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp ground cloves
  • ½ tsp salt
  • 1 medium lemon
  • 1 Tbsp vegetable shortening, oil, or butter
  • 1 tsp apple cider vinegar
  • 1 cup water

The glaze

  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the dry ingredients including flour, sugar, baking soda, spices, and salt.
  3. Make two wells in the dry mixture; add cider vinegar to one and melted shortening/oil to the other.
  4. Pour water over the mixture and stir until just combined, avoiding over-mixing.
  5. Transfer the batter to a greased loaf pan or an 8x8 baking dish.
  6. Bake for 30-40 minutes until a toothpick comes out clean.
  7. Let the cake cool on a wire rack.
  8. For the glaze, combine powdered sugar with lemon juice until smooth.
  9. Once the cake is cool, pour the glaze over it.
