Ingredients

The cake

  • 2 ½ cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 ½ teaspoons allspice
  • 1 ½ teaspoons ground ginger
  • 1 ½ teaspoons nutmeg
  • ½ teaspoon cloves
  • ¾ cup unsalted butter
  • ½ cup vegetable oil
  • 1 cup brown sugar
  • ½ cup granulated white sugar
  • ¾ cup sour cream
  • 4 large eggs
  • 2 tablespoons molasses
  • 2 teaspoons vanilla extract
  • 1 cup pecans or walnuts, chopped (optional)

The frosting

  • 1 cup cream cheese
  • 4 ounces unsalted butter
  • 1 teaspoon vanilla extract
  • 5-6 cups powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C) and grease two 10-inch pans.
  2. Mix the dry ingredients in a bowl and set aside.
  3. Cream the butter, oil, and sugars until fluffy, then add sour cream.
  4. Add eggs gradually, mixing well after each addition.
  5. Combine the flour mixture with the wet ingredients, then add molasses and vanilla.
  6. Pour the batter into the prepared pans and bake for 25-30 minutes.
  7. Let the cakes cool before frosting.
  8. For the frosting, whisk cream cheese, butter, and vanilla until creamy.
  9. Gradually add powdered sugar until smooth, then stir in nuts if using.
  10. Assemble the cake by frosting between layers and on the top and sides.
