Ingredients

The cake

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 cup vegetable oil
  • 1 ¾ cups packed dark brown sugar
  • 1 cup unsweetened applesauce
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup shredded apple
  • 1 tablespoon unsulphured or dark molasses (optional)

Cream Cheese Frosting

  • 8 ounces full-fat brick cream cheese
  • ½ cup unsalted butter
  • 3 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • teaspoon salt

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9×13-inch pan.
  2. Whisk together the dry ingredients in a large bowl and set aside.
  3. In a medium bowl, whisk together the wet ingredients and then combine with the dry ingredients.
  4. Fold in the shredded apple and spread the batter into the prepared pan.
  5. Bake for 45-50 minutes, checking for doneness with a toothpick.
  6. Allow the cake to cool completely on a wire rack.
  7. Prepare the cream cheese frosting by beating the cream cheese and butter until smooth, then adding the sugar, vanilla, and salt.
  8. Spread the frosting on the cooled cake and refrigerate for 30 minutes before serving.
