Crockpot Mexican Chicken

Ingredients

The main ingredients

  • 1 jar salsa
  • cups water
  • 1 lb. chicken breasts
  • 1 lb. dry pinto beans
  • 2–3 tablespoons taco seasoning

Optional ingredients

  • 2 ounces light cream cheese
  • to taste salt

Instructions

  1. Combine pinto beans, salsa, and water in a slow cooker and stir.
  2. Place chicken breasts on top of the mixture, cover, and cook on high for 4-5 hours or low for 7-8 hours.
  3. After about 3 hours, check the mixture, stir, and add more water if necessary, keeping the lid on as much as possible.
  4. Once cooked, shred the chicken with two forks and mix in taco seasoning and cream cheese.
  5. Let the mixture sit for an additional 15-30 minutes before serving.
