Easy Crockpot Chicken Tacos

Ingredients

The Chicken

  • 2 lbs. chicken breast
  • 2 tablespoons homemade taco seasoning or 1 packet taco seasoning
  • 16 oz. jar salsa
  • ¼ cup water or broth

For Serving

  • as needed none street taco tortillas
  • as needed none guacamole
  • as needed none fresh cilantro
  • as needed none minced red pepper or tomato
  • as needed none sour cream

Instructions

  1. 1. Season the chicken breast with taco seasoning on both sides.
  2. 2. Pour ½ cup of salsa into the slow cooker and mix it with ¼ cup of water.
  3. 3. Place the chicken breast on top of the salsa mixture and pour the remaining salsa over the chicken.
  4. 4. Cover and cook on low for 6-8 hours or on high for 3 hours.
  5. 5. Once cooked, shred the chicken using two forks and mix it with the salsa in the slow cooker.
  6. 6. Let it cook for an additional 30 minutes on low to thicken the sauce.
  7. 7. Serve the chicken in tortillas, on nachos, or in a bowl.
