Ingredients

The base

  • 1 tablespoon olive oil
  • 8-12 ounces shredded cabbage

The chicken

  • 1.5 pounds boneless chicken breasts
  • 1 tablespoon lime juice
  • ½ teaspoon smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1.5 teaspoons salt
  • 3 cloves garlic, minced

Instructions

  1. Grease the slow cooker with olive oil and layer the shredded cabbage at the bottom.
  2. Place the chicken breasts on top of the cabbage and drizzle with lime juice.
  3. Mix the paprika, cumin, chili powder, and salt in a bowl, then season both sides of the chicken with the mixture.
  4. Add any extra seasoning over the cabbage and top with minced garlic.
  5. Cover and cook on low for 3 to 4 hours until the chicken reaches an internal temperature of 165ºF.
  6. Shred the chicken using two forks and mix it with the cabbage.
  7. Serve warm in taco shells or lettuce leaves with your favorite toppings.
