Ingredients

The chicken

  • 2 lbs. boneless skinless chicken breast or thighs
  • 1 cup salsa
  • ½ cup water
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • ½ teaspoon sea salt
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper

To serve

  • to taste taco shells, rice, or lettuce
  • to taste taco toppings (e.g., chopped tomatoes, onions, jalapeno, cilantro, olives, avocado, hot sauce, lime wedges, cheese, sour cream)

Instructions

  1. Place the chicken, salsa, water, and spices in a slow cooker and cook on high for 4-5 hours.
  2. Remove the chicken and shred it with two forks.
  3. Return the shredded chicken to the slow cooker and cook on low for an additional 30 minutes.
  4. Serve the shredded chicken in tacos, taco bowls, taco salads, or lettuce wraps with your desired toppings.
