Instructions
- Preheat the oven to 400°F and prepare a baking sheet with foil and nonstick spray.
- Slice the bananas and bake them for 5-10 minutes until golden brown, then mash them.
- Process the oats into a flour-like meal and combine with whole wheat flour, baking powder, salt, cinnamon, and nutmeg in a bowl.
- In another bowl, whisk together half and half, Greek yogurt, eggs, melted butter, vanilla, and honey until smooth.
- Combine the wet and dry ingredients, mixing gently and folding in the caramelized bananas.
- Transfer the batter to a greased muffin tin and mix the topping ingredients to sprinkle over the muffins.
- Bake for 10-15 minutes until the muffins are puffed and spring back when touched.
