Instructions
- Preheat the oven to 350°F.
- Blend oats until they resemble a flour consistency and set aside.
- In a large bowl, mash the bananas and mix in the maple syrup, egg, coconut oil, and vanilla extract.
- Combine the wet and dry ingredients by adding the ground oats, cinnamon, nutmeg, salt, and baking soda, mixing until fully combined.
- Line the muffin tin with liners or spray with cooking spray, then fill each muffin cup ¾ full.
- Bake for 16-19 minutes and enjoy warm.
