Instructions
- Preheat the oven to 375°F and prepare the strawberries with lemon juice and sugar before roasting them for 20 minutes, stirring halfway through.
- While the strawberries roast, combine sugar and lemon zest in a bowl and rub together until fragrant.
- In a large bowl, mix flour, the sugar-lemon mixture, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, eggs, melted butter, lemon juice, and vanilla. Combine wet and dry ingredients until just mixed, then fold in chia seeds.
- Heat a griddle or pan over medium-low heat, then cook pancakes using ¼ cup of batter until bubbles form, flip and cook until browned.
- Serve pancakes warm topped with roasted strawberries and butter.
