Instructions
- Mix the topping ingredients and set aside.
- Whisk together flour, apple pie spice, baking powder, and salt in a medium bowl.
- In a large bowl, beat butter and sugar until creamy, then add egg and vanilla and mix well.
- Combine the dry ingredients with the wet ingredients until mixed.
- Roll dough into balls and coat in the sugar-spice mixture, then place on a lined baking sheet.
- Make an indent in each cookie using a spatula or your thumb.
- Chill the cookies for at least 2-3 hours.
- Preheat the oven and line a baking sheet.
- Bake cookies for 12 minutes, then fill indents with caramel and bake for an additional 1-2 minutes.
- Cool cookies on a wire rack; the caramel will set after a couple of hours.
