Twix Thumbprint Cookies

Ingredients

The cookie dough

  • 2 ¼ cups all-purpose flour
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • cup granulated sugar
  • 2 large egg yolks
  • 1 ½ tsp vanilla extract

The filling and topping

  • 26 pieces soft caramels
  • 3 ½ Tbsp heavy cream
  • ¾ cup milk chocolate chips or chopped chocolate
  • to taste optional Maldon sea salt flakes

Instructions

  1. 1. Whisk together flour and salt in a mixing bowl.
  2. 2. Cream together butter and sugar in an electric mixer until well combined.
  3. 3. Mix in egg yolks and vanilla extract, then slowly add in the flour mixture until just combined.
  4. 4. Scoop dough into 1 Tbsp balls and make an indentation in the center with your thumb.
  5. 5. Chill the cookies in the refrigerator for 45-60 minutes.
  6. 6. Preheat the oven to 350°F halfway through chilling.
  7. 7. Bake cookies for 14-15 minutes until set, then re-indent the centers and cool on a wire rack.
  8. 8. Melt caramels with cream in the microwave until smooth and fill the centers of the cookies.
  9. 9. Melt chocolate chips and drizzle over the cookies, then sprinkle with sea salt if desired.
  10. 10. Allow chocolate to set before storing in an airtight container.
