Instructions
- Preheat the oven to 350°F and line a sheet pan with parchment paper.
- Beat the softened butter until light and fluffy, then add powdered sugar and mix well.
- Incorporate vanilla extract, flour, and salt, mixing until combined.
- Wrap the dough in plastic wrap and chill in the freezer for 20 minutes.
- Roll out the dough to ½ inch thickness on a floured surface and cut out cookies using a 2-3 inch cookie cutter.
- Place cookies 1 inch apart on the prepared baking sheet and bake for 12-13 minutes until edges are light brown.
- Cool the cookies on a rack.
- Melt caramels with evaporated milk in the microwave, stirring until smooth.
- Spoon caramel onto each cookie and let it firm up for about 20 minutes.
- Melt chocolate chips and shortening in the microwave, stirring until smooth.
- Spread melted chocolate over the caramel layer on each cookie and let it harden before serving.
