Instructions
- Preheat the oven to 350°F and prepare a 9x9 baking pan with parchment paper.
- Cream the Earth Balance and sugar until fluffy, then add vanilla and salt.
- Stir in the flour until the dough forms walnut-sized chunks, then press into the pan.
- Bake for 20-23 minutes until golden brown around the edges.
- While the shortbread bakes, prepare the caramel by boiling Earth Balance and sugar, then reducing heat and adding salt, maple syrup, and peanut butter.
- Once the shortbread is out of the oven, pour the caramel over it and spread evenly, then freeze for 30 minutes.
- For the ganache, heat chocolate and coconut milk until smooth, then stir in maple syrup.
- Remove the shortbread from the freezer, pour the ganache on top, and spread evenly.
- Freeze again for 20-30 minutes until firm, then cut into fingers.
